This is my mom's banana bread recipe that we always go back to. It's an all time favorite because it's delicious and so easy to make. We made it last night to use up the several containers of frozen banana. The last couple times, we've made the vegan version, but my sister followed the original recipe last night. The bread is so much softer and lighter when you use oil and eggs!
3 c all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 1/2 c sugar
2 eggs (can use flax eggs)
1 c oil (applesauce works too)
3 c mashed bananas (not pureed)
3/4 c walnuts (optional)
Preheat your oven to 350 F. Beat together eggs, sugar, and oil. Sift flour, and mix the rest of the dry ingredients together. Mix in the mashed bananas. Mix in the walnuts. Bake in greased 9 x 13 pan.
Oh man that looks delicious - I love banana bread, we have it a lot at home too because no one eats the banana and so when it gets too soft we use it to make bread. Will have to try this recipe out. thanks for sharing.
