So I'm pretty sure Mama Pea creates the best vegan recipes. I'm entering all the giveaways for her cookbook, but I will probably end up ordering one pretty soon! I really love quesadillas, but hate how greasy/overly cheesy they are at restaurants. This recipe has the perfect blend of sweet vegetables and cheese. I was so eager to eat this, which is why I only managed to snap one picture. :D And what is better than regular Mmmm sauce? NACHO MMMM SAUCE, which made the perfect topping for this quesadilla, as well as a chip dip! We ended up having some leftover succotash, which was great for eating with chips the next day too.
