When I'm trying to figure out what to make for dinner, somehow I always go back to Peas & Thank You to look up recipes. Mama Pea never fails to disappoint! This honey lime tofu with strawberry peach salsa is the perfect summertime meal. I'm not sure if it was letting the tofu marinate overnight, but the texture was amazing! The salsa was nice and tangy and delicious on its own.
Finished off the meal with anytime cookies! Nuts/raisin/chocolatey goodness.
