Vegan Chocolate Cupcakes

My sister had been wanting to make a layered chocolate cake for the longest time, so after some searching, we finally found this recipe that we were happy with. We actually halved the recipe, so after mixing the batter, it was decided that mini cupcakes were probably a better idea. And I got to have some fun with icing them! 
One thing that could have been improved was the moistness of these cupcakes. After they spent a bit of time in the refrigerator, the cupcakes were still delicious, but a bit chewy and definitely not as moist as the cake that appears in the original recipe's picture!

Blueberry Scones

adapted from Blue Harvest Farms

Ingredients:
2 cups self-rising flour
1 tablespoon sugar
pinch of salt
1/3 cup Earth balance
1 egg
1/4 cup almond milk 
1/2 cup blueberries

Glaze
1 1/2 tbsp almond milk
1/2 cup powdered sugar

Stir together, adding more milk to get desired consistency.

Instructions
Stir together the flour, sugar, and salt. 
Rub in the Earth balance with your fingers until the mixture resembles small crumbs. 
Add the egg and milk.
Mix together to form soft dough. 
Carefully stir in the blueberries.
Roll out dough on a lightly floured surface to a thickness of an inch. 
Cut into triangles.
Place triangles on a lightly greased baking sheet. 
Bake at 400 degrees for 8-10 minutes.

Davis Cup

Yesterday I drove up to Austin to go see US play Spain in the Davis Cup's final day! It was a pretty last minute decision. . I was still searching for tickets on Craigslist on Friday night, but we managed to score some awesome seats. The tickets that we bought were located in the mezzanine, but the people we bought them from had seats on the lower level. No one claimed the two empty seats by them for two days, so they told us to come in with them and just sit there. Nobody came by the entire time, so we basically scored a free upgrade!

Double the Fun

I wanted to run, but it was supposed to rain, and the skies were dark and cloudy. Since I couldn't workout, I made Mmmm sauce.

While these were baking, the skies started clearing up, so I was able to go on the run after all. I recently got Vibrams (more on that later), so I've been working to build up mileage with those. The weather felt amazing outside. It actually cooled down to 82 degrees, and there was a nice breeze. It hadn't felt that cool since early May!

Lime Chia Seed Muffins

I had originally wanted to make these Wimbledon cupcakes for today. After realizing we didn’t have all the ingredients, I settled for muffins! I found this recipe awhile back and knew I wanted to try them soon.

I used lime instead of lemon, canola oil instead of coconut, and vanilla extract instead of lemon. The result were these nice fluffy muffins. The addition of chia seeds give them such a nice texture as well.

Channa Masala with Naan

The family was in the mood for Indian food today, so it was the perfect opportunity to try out this recipe.

Of course some naan needed to be made to go with the channa masala. After some searching around, I found a vegan naan recipe. It didn't come out looking like typical fluffy naan, but it was still quite delicious.

Some crispy fries with some extra potatoes we had on the side. This is the first I've tried making fries, and they were a success! Awesome recipe.
